How easy is it to add rod holders to a sit-on-top kayak that doesn't already have a slot for one? I don't want my kayak to leak!

Dina, the infamous “Miss Guided”, from Paradise Coast Paddler’s Club in Naples, FL, makes history by getting into a sit-in kayak for the very first time. Way to go, Dina… and congratulations to Chippie-Ho! (Dina bought this kayak for her husband, Chip)

Depends entirely on what you'll be using it for. There are some very good sit-on-tops out there good for everything from just doing a little recreational paddling to fishing and even scuba diving.
But if you plan on learning to do white-water river kayaking, you'll want a kayak that you can fit a spray skirt over the cockpit and eskimo-roll. Same with surf kayaking (though there are some sit-on-tops that you can do that with).
For long distance ocean kayaking, a sit on top might not be your best choice either. Being inside the boat protects you to some degree from weather and cold-water, and for some people it is more comfortable especially for longer duration use.
There are many types and styles of kayaks. It would be easier to answer you if you said what activity you will be engaging in. If you're fooling around for an hour at a time on a flat lake is a lot different from sea-kayaking with the Orcas in Puget Sound or running class IV whitewater.

What is the best time to buy a kayak in the midwest area? i would think winter?? Also….i am a completely new beginner in the kayaking world. What is a cheap but not crappy kayak that would be a good deal for me. i dont want something really fancy and i dont want something flimsy and weak. I also don't want a sit on top kayak….any advice anyone?
The winter would be a good time to look for used ones, but there is no way to try them out first.
If you are buying your first kayak, I'd really suggest trying them out first.
If you have a local kayak specialty shop or someone like REI, they may have paddle days where you can try out a dozen or so different models and find out what is important to you.
At a local one here (Minneapolis) last year, REI was giving out discount coupons for any kayak bought in the next several weeks.
Another advantage to REI is their return policy. A friend decided that she really didn't like one after she had it out for a couple afternoon paddles, took it back and got a different one.
If price is a major factor. Look at things like Craig's list or search on Ebay with a local distance specified.
